One of the most important and difficult tasks to do when owning your own business is to find the right people to help make your dream come to life.

TSB is fortunate to have a great team in place. We have a dedicated staff in the front of house who diligently take care of our customers. We also have a talented team in the kitchen. They are the ones who make all of the delicious treats and amazing cakes that our customers love so much but they are rarely seen. So I wanted to dedicate this post to the bakers and decorators who are the backbone of TSB.

We are so lucky to have three classically trained pastry chefs and a graduate of the Hilton college in our kitchen:

Chef Lindsey is a graduate of Le Cordon Bleu in London. She was a ray of sunshine the very first time we met her. Chef Lindsey decided to join out team right before opening day. She worked long hours from the very beginning and is an awesome baking partner in crime.

A month after we opened, Chef Martin jumped on board to offer some relief to Lindsey and I in the kitchen. He graduated with a pastry chef degree from Johnson & Wales University in Miami. He brings creativity and passion to his work, and is very dedicated to TSB’s future.

We recently promoted Maya to the position of assistant baker. Maya graduated from the Hilton College of Hotel and Restaurant Management at the University of Houston. She works diligently in the kitchen and also assists me with decorating cakes, cookies and cake pops.

The newest kid on the block is Chef MaryCameron, also known as “the intern”. She just graduated as a cuisine and pastry chef from Le Cordon Bleu in London and is getting her feet wet in the world of cake decorating. In the short amount of time that she’s been here, she has already proven that she has the chops and talent for cake decorating. We have high hopes for her at TSB.
As a business owner, you will go through many interviews, hires and fires until you find the right employee. I wish there was an easier way to go about this. My advice is to take your chance and go with your gut. Many times, you will be right.

    Wow. Johnson & Wales? That’s the College that I went to, even though I went to the Denver campus. That’s a great school for Culinary and Baking and Pastry Arts. I hope that he’s doing great!
